The Eight Rows Sauvignon Blanc (2017) is part of a small batch production with low harvest yield for the best results. The Sauvignon Blanc grapes are harvested at night and pressed over 36 hours. After three weeks of fermentation the wine is then left on the lees for 4 months, with weekly batonnage.
This Sauvignon Blanc is unfiltered and therefore some sediment may occur.
Sauvignon Blanc fans will go crazy for the Diemersdal Eight Rows. An intense nose reveals layers of green and exotic fruits, with a hint of flint and minerality. These concentrated aromas really follow through on the palette, in a rounded and balanced fashion. It has a lengthy finish.
Recommended food pairings for this wine are roast vegetable dishes and fish; fresh salmon or pan-seared tuna.
